Minestrone
It's a soup. Make it your own. But this is what I made because I wanted to use up some kidney beans.
INGREDIENTS
1 Tbsp vegetable oil
1/2 large onion, diced
1/2 large carrot, diced
2 stalks celery, diced
1 small potato, diced
2 cloves garlic, minced
2 tsp italian seasoning
1/2 tsp salt
1/2 tsp black pepper
1 large bay leaf (or two smaller leaves)
1, 398ml can diced tomatoes
500 ml vegetable stock
500 ml water
60 g orecchiette
200 g cooked kidney beans
1 Tbsp maple syrup
a few drops liquid smoke
METHOD
- Add oil to a medium sized pot and place over medium heat. Sweat the onions, carrot, celery, and potatoes until onions are soft.
- Add garlic, italian seasoning, salt, and pepper and cook for a few more minutes.
- Add bay leaf, diced tomatoes, vegetable stock, and water. Increase heat to medium-high to bring soup to a boil.
- Once potatoes are soft, add remaining ingredients and boil until pasta is cooked through.
